You can always recolor the original drawn signature (e.g., in Photoshop if it's an image, Illustrator if graphics) and create a new signature appearance. There are not tools in Acrobat to change the color.

Are you asking about a digital signature appearance or an e-signature they you draw/type?

Digital signature appearance. It is based on a signature that I drew and is now available in two forms: straight-up signature that you can place in a document; and digitally time-stamped signature with typed info. in the surrounding box that validates (somewhat) the signature's origin.
