The barcode fields that you create in Acrobat are limited to several 2D barcode types (PDF417, QR Code, Data Matrix). For 1D bar codes like EAN, you can use a special bar code font in a regular text field and do any necessary calculations in JavaScript, or use LiveCycle Designer, which supports many types of bar codes.
