How do I format my form so it will go out for signature, then come back to me for my signature before showing as complete and sending a signed copy to the signer?

Make your are configured to sign in order and that you sign last. A user I believe is always allowed to keep a copy of a document they signed. It would be unethical to keep it from them. Their copy will not have your signature and should not show as complete.
