I'm sorry, but if the document is out for signature, then there is no way to unshare it.

Yes they can still view your document. I had to cancel my credit card. Adobe escalated it supposedly but nobody called me.

Sorry for the delay in response.
When you send a document for signature to a wrong party/signer via Adobe Sign, you may cancel the document from the Manage tab till it is not opened and signed by the receiver.
If you cancel the document before it is signed and filed by the signer, the document will not be visible to the receiver. If the receiver will try to open the document by clicking on the link in the email, a message will be displayed that the document has been deleted.
However, if the document is signed by the user, then delete option will just hide the document under the Manage tab in your account. It will not delete the document.
To delete a document from the Adobe Sign account, you will need the data retention policy. Please refer to the following help document for more details on the data retention policy.

The data retention policy removes the document from the account, so it will not be visible to the signer's end as well (except if the signer has a downloaded a copy of the document).
NOTE: The "Delete" option in Adobe Sign is now changed to "Hide". However, the function remains the same.
