Visual Control Over Signatures

I'm wondering how much visual control there is over signatures requested (not the FIll & Sign types of signatures). I add my date/text inputs, signature blocks, etc., to a document before I upload it to Adobe Sign online, from where I then 'send' it out for signing to a given client. 

 

When I do this, it appears that there is some visual control and I adjust those settings, but in the end, when a 'request signatures' document comes back to me signed, none of those specs that I have set, come through. I have screen captures embedded below:

 

 

Setting the input to a type "Signature"

Setting the signature's colour, font and size

(I recognize that here only the font colour is likely to apply)

Setting the signature to align in the center of the signature input block

And here is what comes back... black ink signature without center alignment

Maybe what I'm seeking is not possible, despite appearing to be possible?
