After Effects freezes and destroys file

Hi,
I have a problem with After Effects 24 and 25.
I'm using a MacBook Pro M3 Max and AE 25.1.0
Every time my project gets a bit bigger (lots of different footage in a composition, about 50 layers, much of it animated and with effects), After Effects freezes. It happens seemingly at random, while I'm applying an effect, or moving around in the timeline, or starting playback, whatever.
AE suddenly gives me the colorful spinning ball and no longer loads anything, no matter how long I wait. So I have to restart every time. If I do so, I get an AE allert and a crash Log.
The problem is even more devastating for me. Once it occurs, it seems like the entire file is destroyed. As soon as I open the file again, AE freezes after about 10 seconds (or at the latest when I press the play button). The dubious thing is that even the auto-saves of the last few hours show the same error, although they didn't have the error before. Most of the time, an old version from a few days ago works, but hours / days of work is lost.
Sometimes, if I am very fast, within the 10 seconds, and I remove half of all layers and additionally reduce the project (where everything unused is removed), then I can save this part again. But even that doesn't always work.
Things I tried to fix it:
- clear cache
- resetting preferences
- starting after effects in safe mode
- deinstalling after effects and reinstalling
- restarting macbook
- importing the whole Project into a fresh one
- make offline and relink all the footage
I ask for help and a quick solution!
