It's one I've not stumbled across before, but I agree, it's not a great shortcut to hit accidentally.  Fortunately if you go to Edit > Keyboard Shorcuts, you can search for and remove CTRL + W.

 

My particular "favourite" is CTRL + \, I like a toolbar and this removes it.

CTRL+W does not close the project, it only closes the active window. You can open any closed window in the Window Menu. If you closed any composition it can be opened again double clicking on the composition inside the project panel. So maybe you need is to understand the basics of using After Effects instead using your irony to tell us that Adobe is the culprit of the way you use After Effects.
