Hi My Mac Mini 2014 has given up the ghost. I have bought an iMac with High Sierra 10.13.6 can I use AU with this operating software?

If it's 64-bit (which I think it is) then yes you can, as long as it's a current version; earlier 32-bit releases won't work on it. If you need to run a 32-bit version, then you'll need a PC...
Microsoft behave rather more reasonably over this, and let you run 32-bit apps on their current OS in a simulation - which works fine. Apple, on the other hand, don't think you are entitled to run any 32-bit apps at all now.

If you're talking about the current version of Audition (23.1) then the System Requirements state that you need Big Sur (macOS 11.0) or later.

I stand corrected. I presume that this is more likely to be down to Apple than anybody else. Doesn't look good though, does it? Even though you might be able to run Audition 22.0 on it, you'd never be able to upgrade.

Adobe only makes the current version (2023) and the major version immediately prior (2022) available via the Cloud desktop app.
Audition CC 2020 (13.x) was the last version supported on High Sierra. But the only way to obtain the installer is to contact Adobe Customer Care direct. This is only available to paid up Cloud subscribers.
