I used to be able to have a color label, such as green by pressing 'control 8' but now I have to use the menu.
Used to have edit history, when checked in preferences, but now it is on the metadata menu, but empty, nothing there.
Windows 10.

For your first issue, is it possible that the setting for this in the Preferences is unchecked?
For the other issue, I'm confused: since Bridge cannot do any changes to an image, there is no history to go back to. Same with the ACR preferences, I looked though there and found nothing. Might you be thinking of Lightroom Classic or Photoshop on this history issue?

Here is edit history checked in Bridge metadata. In earlier versions I used to be able to view changes made in Photoshop in the panel.
