See this message. It worked for me ACR is quite capable of opening CR3 files, however if you follow the following advice the files will open automatically.

ACR can open CR3 files from the EOS R (your camera).
Currently, ACR cannot open files from the EOS RP until Adobe issues an update for Camera Raw.
Although the file extension (CR3) is the same, the file format is different for each camera model.

I see a lot of users looking for the Canon EOS RP raw support in this thread and we are happy to announce Lightroom Classic 8.2.1 and Camera Raw 11.2.1
New camera raw file support added in this release:
Camera Raw 11.2.1 which, in addition to the new camera support listed above, includes a bug fix affecting the opening raw files stored on a NAS. This change should fix issues with Bridge and Lightroom Classic opening raw files using Edit in Photoshop. Note: It is necessary to install the Camera Raw update to fix this issue. Installing Lightroom Classic 8.2.1 alone will not affect the issue.
You can install the updates on desktop applications via the Creative Cloud App. [CTRL/CMD]+[ALT/OPT]+[ R ] will refresh your app if the update doesn’t appear. See Update apps to the latest release of Adobe Creative Cloud
Let us know if this solves the issues you were facing while processing raw files from the Canon EOS RP.

I have the same problem. I have just purchased a Canon EOS R. I also have a new Macbook Pro. All Adobe software is newly installed and up to date.With my old CR2 files I can open from Bridge by double clicking the file. This doesn't happen with the CR3 files. ACR does recognise them because I can right click and ask to open in ACR. Photoshop preferences only shows Canon CRW, CR2 files to open automatically in ACR. I can't add the CR2 file to that list. Adobe needs to change it and update Photoshop or ACR,
I have spoken to Adobe on the phone and they start asking stupid questions about my MAC, but seem to refuse to accept that it is a change they need to address with an update.
Come on ADOBE get your finger out please!

I don't have an EOS R but just downloaded a couple of sample files. When I double clicked in Bridge it gave me a Windows dialogue asking which application to use to open the file. I chose Photoshop CC 2019. This updated the Windows 10 file associations and the files now open directly from Bridge into ACR with a double click. So the Windows OS associations are used if Bridge does not override them.
So try updating the Operating System associations rather than Bridge. Sorry, I don't use a Mac so can't give you a direct instruction on how to do that in your Mac OS.

It can be easily opened by Adobe DNG Converter by changing the compatibility in the "Preferences" menu. Open DNG Converter; Click "Change Preferences" in bottom of the window; in the new window click on "Compatibility" and select "Custom" leave default "Backward Version, DNG 1.4" unchanged but check the two boxes (linear and Uncompressed). That's it, .CR3 files will open right away.

I just tried to open the Canon R5 .cr3 files in LRCC, Bridge and PS. No luck. I checked Adobe Cloud and I have the latest version of all 3. Version 12.3 of Camera Raw, LRCC 9.3 and PS 21.21. What's up....

The Canon R5 is not yet supported by Adobe Camera Raw.

If you're referring to support for the Canon R5, that was released in Camera Raw 12.4 back in Aug 2020.
If you're referring to something else, please elaborate.

So why do you subscribe? Depends on the apps you use but Adobe spends billions each year on product development. Anything specific you're looking for?

I believe that Canon R5 support was added to Camera Raw v12.4 8 / 2020

After you update the copy of ACR that supports it or, convert to DNG with the latest (later) version for PS 2019's ACR.
