Is it safe to remove old versions of apps?

Creative Cloud installs new versions of apps but does not remove old versions. Is it safe to remove the old versions? Is there anything to do before removal?

For example, I now have 3 versions of Bridge, Premiere Pro, Illustrator and more...

you have the option to remove older versions.  and yes, once you're comfortable with a new version, it's safe to uninstall the old.

Do I need to back up the preferences of the old versions or are they automatically transferred to the new version?

when you uninstall an older versions you are given the open to retain (and transfer) the preferences:
