I got the plan for students and teachers , which gave me 100 gigabytes of From cloud storage, my question is what happens to my files if I cancel my subscription to the paid plan or are late in payment ? , thanks for your time

Access to all Creative Cloud apps & services will stop when your subscription ends. That includes cloud storage, Adobe Portfolio website, etc...

Is there a way to save out the editable files? Do they remain within the cloud for an indefinite period of time--until I renew my subscription. Will they always be available? Or does Adobe delte the files after a certain amount of time?

If you cancel your paid Creative Cloud subscription then your plan will revert to the free level of membership, which provides 2 GB of cloud storage at no cost for everyone.
If you are currently using more than 2 GB, then you have 30 days to reduce your online usage down to that level. If not, then files stored in the cloud could be lost if you do not copy/save them locally to your own computer.
