AIGPUSniffer quit unexpectedly” is an error that might occur on Mac OS X when using various Adobe products, including Adobe Illustrator, Adobe Bridge, Adobe Creative Cloud and others. This is quite a common issue that has been bothering users at least since 2015 I think.

However, you can change these settings by following workaround :

Workaround 1.)

  1. Go to Bridge Preferences.
  2. Choose File Type Association.
  3. Change default to Adobe Illustrator.

Either Install available updates of Adobe and Mac or roll back to previous version of AI like AI 22.1

So far as I know it’s like this. Lots of video drivers are just rubbish and crash apps if you do certain things. I think AIGPUSniffer is doing the things first so Illustrator doesn’t crash. So, it takes a bullet for Illustrator.

I was reading here​ that the AIGPUSniffer's role is to test your graphics card and report back its findings to
the application in question. Basically, it checks what your GPU is capable of and also tries to prevent
GPU-related crashes.
