...specifically, Photoshop, Illustrator, InDesign and Acrobat. The specs for these CC programs require "Multicore Intel processor with 64-bit support," but I'm ignorant if my processor is or isn't in this category. Thanks!

I still have my 2013 MacBook Pro:
MacBook Pro (Retina, 13-inch, Late 2013)
2.4 GHz Dual-Core Intel Core i5
8 GB 1600 MHz DDR3
Big Sur 11.7.1
Creative Cloud won't launch and the installer errors when trying to re-install. InDesign crashes. Is CC still compatible with my dinsaur?

yes, but maybe not the version you have installed.
uninstall every cc app including preferences, https://helpx.adobe.com/creative-cloud/help/uninstall-remove-app.html
then uninstall the cc desktop app, again using the correct uninstaller, https://helpx.adobe.com/creative-cloud/help/uninstall-creative-cloud-desktop-app.html#sa_src=web-mes...
clean your computer of cc files per http://www.adobe.com/support/contact/cscleanertool.html
check for, and if available, update your os
restart your computer (don't skip this)
reinstall the cc desktop app using the "alternative download links" at the bottom of the page at https://helpx.adobe.com/download-install/kb/creative-cloud-desktop-app-download.html
use the desktop app to install your cc programs/trials
