I purchased Adobe Illustrator CC, and when I try to install it, it tells me that it is not compatible with macOS 10.15.7.
I tried to follow the steps to install an earlier version (https://helpx.adobe.com/download-install/apps/download-install-apps/creative-cloud-apps/install-prev...), but I don't see the option to choose “older version” (print).
What can I do?

start by checking if your os is compatible with the current or one previous version,

if it is, you can enable show older apps (if you're not on the trial) by using the cc desktop app preferences.

Catalina is well beyond its sell by date. You need to upgrade. Your OS is 5, soon to be 6, versions behind.
Make sure your computer meets the minimum CPU & GPU requirements. Most Creative Cloud apps work on these systems, no more than 2 versions back:
NOTE: MS is ending Win10 in October. Apple will release macOS 26 (Tahoe) later this year.

No. From the previous post it was explained that you are only allowed to install the current version and one back. Because of this the earliest version of Illustrator available is 28.0. The system requirements for Mac OS require that you have OS 11 or later so your version of Mac OS 10 is not supported. If your Mac cannot be updated to OS 11 you will need to look for a newer Mac that has this capability.
