I would greatly appreciate a way to bypass Creative Cloud and still use CC applications.

Make sure you have the latest CC desktop. It's (seriously) gotten a whole lot better in recent months. It's like a launchpad for all the other stuff. If you can elaborate on the problems you're having downloading the apps, be specific and we can try to help.
