Acrobat pro DC is an latest version of Acrobat Pro application.
If you had installed Acrobat Pro XI uninstall it from -> Finder >Go>Utilities: Adobe Installers.
Clear Tmp folder contents.
Then try to install Acrobat Pro DC via Creative Cloud desktop app, if you had already installed it , sign out and sign in.
Note : You can install only one version of Acrobat application on a computer.
You had installed any other version, please uninstall it and try to install DC version.

We have Adobe Acrobat 8 Professional installed and didn't want to uninstall anything because we ordered an upgrade download, and wasn't sure if the upgrade would work if there wasn't an older version to replace when we installed it... is this a valid concern or will the new installation still work without a previous version installed?

It is mandatory , that only any one version of Acrobat application can be installed on a computer, you cannot install 2 version on a same computer.
You need to uninstall Acrobat 8 Pro , in order to install Acrobat DC.
If you had purchased Upgrade serial number, Please re-confirm for which version of Acrobat you had purchased upgrade serial number ?
The upgrade for DC is either Acrobat X or Acrobat XI version.
The new installation will definitely work without previous version installed. no need of previous version, it will conflict new installation process and provides error.

It is better that you contact Adobe Customer Support , have a check with Acrobat upgrade you had purchased..
They will analyze serial number and assist you accordingly , the best option is to contact them via Live Chat.
They even have Technical Support for installation process on Live Chat. they will assist you with the installation process also.
