It's right. Apple regularly block all old apps, so you don't have any old software on your exciting new MacOS. It's all part of the Joy Of Mac.
You need to get up to date. https://www.adobe.com/creativecloud/plans.html

This isn't exactly true. Apple moved from 32-bit to 64-bit with Catalina and so older 32-bit apps are no longer supported. Developers had YEARS to update and some, well...
I have a number of older 64-bit apps that run just fine on the current macOS Monterey.
The alternative is to not adopt new technology and just stay stuck in the past. That's easy to do- get an older computer and don't update it.
Otherwise, yeah, updating software has been a thing since the first personal computers came out in the mid 1970's.

If it's available, your other option is to roll your Mac back to the operating system you were running before Big Sur. Then reinstall CS6.

Catalina, Big Sur & Monterey won't support legacy 32-bit apps. You need all new 64-bit software now.
One option is get a used Apple computer no higher than macOS Mojave and never upgrade it. The other option is to buy new software that is compatible with your new Mac OS. Which is more important to you -- using outdated software from 9 years ago or using a modern OS?

Thank you for all of that indepth information but say I buy one of the options you have proved and 2 years later my Mac automatically does another update, then what I am supposed to keep buying this software because it's not up to date with my Mac? Surely there has to be another way.

If you get up to date with Photoshop (for example with Photography Plan or All Apps plan), you will need to get a subscription. The subscription is not for a fixed version, it includes future updates. So when Apple block all old apps again (they are certain to do this), you will get the new version (in time) without extra cost. Of course, when you stop paying you have nothing.
If you buy Photoshop Elements, certainly you will need to pay for an upgrade each time Apple blocks old apps. This is all part of the Joy Of Mac.
