Hello there,
Why does Dreamweaver 21.1 not support PHP 7.4? Why do I only have to use PHP 7.1? PHP 8 is out, but Dreamweawer doesn't even have PHP 7.4 yet. Why why why ? PHP 7.4 and PHP 8 support should come as soon as possible. This has stressed me out and I can't work.

Tools don't build great web apps, people do.

There's almost no difference between incremental updates in PHP 7.1, 7.2, 7.3 and 7.4.  Manually code with whichever version your server supports.

If you move to PHP 8, you'll need to be familiar with syntax changes and deprecated functions that are no longer supported.

    Happy coding!

And despite what you say, there are significant differences between php 7.1 and 7.4, and much more with php 8.0. New features (new types, etc.) which, if used on DW are marked as errors and therefore pose a real problem when one has to check the syntax of a code. The tool that is supposed to help us, ultimately slows us down. Erdemir is right to complain: by the time PHP evolved, DW should have evolved too.
I fought unsuccessfully for several months to win my case against bugs that have existed on DW since its version 17. These bugs slow me down in my work and are still present, it is unacceptable. But I stopped fighting with Abobe's customer service seeing that it would come to nothing. Today we are impatiently waiting for DW to evolve with PHP. But no: no evolution, no bug resolution, only new tools that are often useless. The DW development team should ask the right questions because many of us are beginning to wonder why we continue to pay to work with such a tool that is becoming obsolete and counterproductive.

You can try to submit a feature request to Adobe for this: https://www.adobe.com/products/wishform.html

However, if this is stressing you, have you considered working in alternative editors?

Bug & feature requests should be posted on UserVoice where the appropriate product team will see it.

You can also submit directly from DW's Help Menu.

    RELAX.

First find out which version of PHP your server has.

There's no point in coding with PHP 8 if your server doesn't support it.  Also PHP 8 is NOT backwards compatible with PHP 7.

Server's PHP version 7.4. But that doesn't matter, the important thing is why can't I change version in Dreamweawer?
