It would be extremely helpful to find this out since most of our logo library that is created as a white logo when we are saving previews, you cannot tell from the preview because the background is white
There is no option to change the color of an artboard to something other than white. You could simply draw a rectangle with your desired background color to the size and position of the artboard and place it on a locked layer. You could also submit a new feature request for the functionality that you're looking for at https://illustrator.uservoice.com/forums/333657-illustrator-desktop-feature-requests.

This is not perfect, but you can edit the transpareny grid colors under Document Setup and then select the View>Show Transparency Grid menu.

In File > Document Setup you can check the Simulate Color Paper and change the 2 swatches that define the Transpareny Grid to black.
It will only change the preview in Illustrator, not export or preview in Bridge.
The method suggested by Bill is easier, but don't forget to hide the black rectangle when printing, exporting or using it in other apps.
