My assets file was saved over to a specific .eps artboard file on accident, the preview in illustrator still shows the assets, but actual file doesnt. Is there any way to fix this?

Can you please describe this in more detail? Exactly what did you save over exactly where? Screenshots would also help.

EPS is an outdated file format. It is not suitable for workfiles.

I saved over my working file with all my assets in illustrator. The first sceenshot is what the preview image looks like, and the second is what the inside of the file looks like in illustrator

EPS previews are generally unreliable.

If you absolutely need to save an EPS, copy the artwork to a new file and then save that.

No, you can't get them back. Unless you have versioning on the volume you saved it on. maybe something like Time Machine? Or if you saved on Google Drive or Dropbox, maybe you have versioning running there?
