Hi there,
I have a photo and then another photo on top which was an artist’s Sketch of the photo. I used image trace on the jpg of the artist sketch and this gives me turquoise/Blue lines.
How do I change the the colour of these lines?

Depending on your intended use, the first (and fundamental) issue may be copyright.
What happens if you deselect?
Always expand after image tracing to get things to work.
Select it/them and Object>Image Trace>Expand.

We commissioned the art so no copyright issue there.
Ok thanks! What do I do after I expand and have all the little blue dots appear?

After Expand you would want to
Object > Ungroup
then Select > Deselect
and select the parts you require and change the colour for them
eg by the colour swatch

Hi there Ray,
I really appreciate your help. I'm just stuck on the final application of the colour! Apologies, I'm very familiar with Premiere and After Effects but rather a newbie with Illustrator. I followed your instructions and got to here...just can't quite figure out how to apply the colour to the turquoise/blue expanded lines.

You have somehow managed to turn them into guides. Needs to be reverted.
Select them and View > Guides > Release Guides
Then apply fills.
