How can i correctly convert CMYK color values to Grayscale? Would selecting the color and just setting Grayscale be enough? What conversion would you propose for the following CMYK values?
55.0.200.10
30.0.100.0
0.40.100.0

You would want to consider the output profile. The conversion could be different in different parts of the world.
And also you would want to adjust the result to the actual design.

Just converting to greyscale is not sufficient. You will have to edit the greys in order to preservc the original contrast in the piece. In Photoshop there are nice functions to convert to greyscale where you can enhance certain tones. Illustrator doesn't have those. Unless you have the plugin Phantasm installed (commercial)
