Is it possible to create a symbol, such as a custom bullet point to insert in type in Illustrator? If so, how?

Illustrator can't put graphics in text objects as inline objects and Illustrator can't edit font files.

But there are all kinds of funny dingbat fonts that have plenty of bullety things to choose from. Maybe you could use something from there. Try Zapf Dingbats for starters.

But InDesign can.
So if you have both, you can create a graphic in Illustrator and paste it into text in InDesign.
If you want you can copy that text object from InDesign and paste it into Illustrator.

Actually, Ton, the IndyFont script from Jongware that is available on the InDesign Scripts forum will allow the making of a single character font which will be usable as any other font when installed on your machine.
