I can't figure out how to search for this without a ton of irrelevant result coming up so I'm not sure if this has been reported before but there is a very irritating bug when zoomed in that makes the outlines of an object appear to be wildly skewed when zooming in. Has anyone else encountered this and how can I resolve this? In most cases it is just a bizarre visual bug but in some cases it makes it difficult or impossible to make small adjustments because the lines disappear when I zoom in.

If the problem disappears when you turn of GPU preview (or temporarely switch to CPU preview (Cmd or Ctrl E) then it is caused by the accellerated prview using your video card.
It does not affect output, print or export.
If possible try to get the latest drivers for your video card.

Changing GPU/CPU setting doesn't do anything. Drivers are updated but I don't think it is a driver issue, I have seen this issue for a year or more between a lot of different version of drivers and Illustrator. I never claimed that it effected the output, it interferes with the abilty to make fine adjustments to my lines. The sample image I provided is a simpler case but it quickly becomes a nightmare in more complex files.

If it isn't one of the many preview issues, I suggest that you contact Adobe support:

What model Computer & OS?
Try disabling these 2 settings, does that help?
