I updated my Illustrator the other day to Adobe Illustrator 2025 and both new files and files I have been previously working on with the older version of Adobe are running significantly slower.
What could be the issue here and a solution please.
Not sure if this was resolved for you or not, but I found that the desktop app Magnet (even though telling it to ignore Illustrator 2025) is creating this problem. It affected the previous version of Illustrator, but resovled by setting Magnet to ignore it. Now, it appears that doesn't matter and quitting the Magnet app was the only way to correct major lagging issues.

I have the same problem as you. An adobe employee is trying to help me in another thread. Check it out, but for now nothing they have suggested has worked. I really cannot work at all with Illustrator at the moment.

I'm having the same issues. i've had issues on an M1 Mac Mini 8GB Ram and continues to have issues on an M2 Max Mac Studio 32GB. Illustrator 2023, 2024, 22025. I even complete wiped and reinstall MacOS and still have massive performance issues.

And you don't have Magnet installed?
Do the performance issues also happen when you boot into Safe Mode?
I have a Mac Studio M2 and it runs without issues.

No Magnet. No Rectangle. No other third party software that may interfere. I have seen multiple posts on this forum and other forums of people have same and similar issues, with no solution. I will perhaps have to try the safe mode thing but I don't see how that will help, since the Mac is freshly wiped and reinstalled with minimal apps and programs installed.
I have read that Adobe has not optimized apps for modern and new hardware. General conclusion, Adobe continues to ignore its user base, add new features no one asked for instead of actually modernizing its programs

The Safe Mode is a test whether the issue is caused by something in your system. If it works in Safe Mode then you have to figure out what causes it to fail.

If you are using Windows 11 (or older Windows/PC), try to disable 'GPU Performance'
Edit - Preferences... - uncheck GPU Performance

I uninstalled and reinstalled previous version. Run SO much faster. Lost HOURS of production due to this problem. Mac's a PC's. Starting through creative cloud does help. But the agony of intermittent freezes right in the middle of delicate work is unacceptable. Been a while since I had to use drastic measures to ensure peak performance.
After installing previous version it run 10x faster.
Adobe will fix it. But since the slow down started, they had 2 updates and has yet fixed the issues in our shop.
Maybe next update.
