I was wondering if there was a font sheet or something that would more easily display how a piece of text would look in all of the available default fonts? I know there's the dropdown menu when changing fonts but I want something that shows all of them on one page so I can more easily compare and show them to others.

Thanks for reaching out. I'd suggest you to login on https://fonts.adobe.com/fonts and check out the details of the fonts. You can save links to the fonts you are looking to compare on different tabs in your browser.
Also, you can post this feature request on https://illustrator.uservoice.com/
This is the best way of communicating with the Engineering and Product Management teams regarding issues and suggestions so they can be implemented in future releases.
