In illustrator v 29.6.1 I'm experiencing a bug where my font weights are visually changing automatically and i can't make them show correctly. The character window shows them as being what they should be, but they're showing and exporting incorrectly. See below, the "Commitment:" is demi-bold in the first image. While making my edits, it switches to new font wieght, almost flipping the weights...

I'm sorry to hear about your experience. I tried replicating this behavior on my end but could not. Could you check if this happens with a specific file, and when running Illustrator under a different administrator account (Windows / macOS) and sharing your observations.

Same thing happening here; I have admin on my machine (2023 16in Macbook Pro M2 Max running Sequoia 15.5).
Within a single paragraph of area type, I change some (but not all) of the type to a different weight and it randomly changes the *display only* of other type in the same object. In the inspector, it shows the correct weight but doesn't display that weight. Sometimes if I put a few lines of space between new-weight and intended-old-weight, the display corrects itself, but if I then reposition the intended-old-weight type back to where I want it, it changes back to what i do NOT want. Hopefully that makes sense!
