To get around missing fonts I would place the PDF in to illutrator, then flatten transparency.
we have just installed new macs and now the fonts do not display correctly on the placed PDF

Thanks for sharing these details. Could you please confirm in which application the PDF was originally created? Illustrator can only edit vector PDFs which were created in Illustrator itself and saved with Illustrator Editing Capabilities.

All I am trying to do in place the PDF file, but now when i do the fonts do not display correctly.
I place the file as a linked file and then would flatten transparency, creating the fonts to outline if neccesary but this process is now not working.

I took a look at the video clip you posted. It looks like the letter spacing is messed up in the placed PDF. Does it look the same way when viewed in Adobe Acrobat?

Open the pdf file in Acrobra Pro,
from the tools select "preflight", then in the search bar type : convert fonts to outlines
follow the instructions, save the pdf
