Don't use strokes. You need shapes for this.

To add to what has already been mentioned, here is a file with separate filled color paths.
Create some gradients. Fill each shape with a gradient.
To adjust your gradient, use the Gradient tool.
Add a small weight stroke to each shape, I just use a light brown.
At the end, I Grouped and rotated -45 angle.
