I use multiple page documents to make edits quickly. However, after opening these PDFs in Illustrator as a multiple page document (each page as an artboard, thanks to the new update) and saving this document only allows me to open said document as what it was before - a multiple artboard project. I want to edit a single page, but the option to do so doesn't show up. Am I missing something? Is this a bug?

When you open an Adobe PDF file in Illustrator using the File > Open command, you specify which pages you want to import. You can open a single page, a range of pages, or all pages. The page range options appear in the PDF Import Options dialog box. You can view a thumbnail of a page in this dialog box before you import them.

Yes, I know this. However upon saving said document after viewing it as all pages (or a range), I cannot open the same document and view it as anything other than what I viewed it as before. For instance, a multiple page document I chose to open to view all pages, I cannot view it as a single page or even a range of pages from now on. The option does not come up anymore.

If you want to open just one single page in a PDF, then don't open all pages.
To edit just one page, open only that page and not all pages.

Illustrator 2019 does not open multiple page PDFs. It will only open the first page of the document. Good thing I didn't delete Illustrator 2018.

Can't reproduce that.
Can you please elaborate? Do you want to open a PDF? Did you even save the document with "Illustrator editing capabilities"?

Have you tried to open a multiple page PDF? No that PDF was not saved from Illustrator. That shouldn't matter. It has never been an issue before.

Do you need a screenshot of my imported document or do you take my word?
Mine has been created in InDesign.

Open PDF (saved from Artios CAD) in Illustrator 2019. The next window gives you the option to choose the page you want to open. Scroll to whatever page besides the first page and click open. It will only open the first page. This does not happen in Illustrator 2018 or any other version before 2019.

Also... If you select "all" it will only open one page.

The first version that could open multiple pages of a PDF was version 22.1 (which is 2018.1)
I would assume that there is something about your particular PDF that makes Illustrator act like that. Is it just this PDF or others as well?
Of course you might try the obivous: restart the computer or reset the preferences.

Any PDF that has not been created by the latest 2019 Adobe update acts the same way. Apparently something changed in this new 2019 update. I have to use Illustrator 2018 until this is fixed.

I restart everyday and I have trashed my preferences. This isn't just a problem that I'm having, everyone in my company that uses Illustrator has this same problem (about 14 users).

Opening Multipage works fine for me on the Mac. On Sierra.

It is possible. There was a Mac-only update to Illustrator a few weeks ago (v23.0.4)

Doug - I thought that same thing, But we have been having this issue since Illustrator 2019 was released. I just upgraded to 23.0.4 this morning thinking that it might fix the issue, but it didn't. I've tried to open multi-page PDFs from several different sources. Including saving a multi-page PDF from InDesign 2019. I get the same results. It only opens the first page no matter what I do.

It's not an Illustrator issue. I have 23.0.4 Mac version and it works as expected.
Can you try and set up a new user on that machine and then use that one?

I had the same issue, for example:
Opened a 114pages PDF and wanted the 84th page.
I only entered the number 84 in the first (top) dialog (that was working in previous versions).
Now it don't. Now you have to enter the number of the page in the second dialog. In the 'select page' o Range: (number)
