Illustrator 2022 - View > Proof Setup is disabled

Hi,

As stated in the title, the View > Proof Setup menu in my Illustrator 2022 version is disabled. I still have Illustrator 2021 installed, and the menu is active in that version.

I have a french version of Illustrator, so the corresponding menu is "Format d'épreuve" in the screenshot here below.

Any hint how to bring back that functionality? I'd like to preview my illustrations for colorblind people without having to use a previous version of Illustrator just for that.
