I am have the exact same issue. I completly uninstalled illsutrator and am still haveing the issue.
I'm on an M2 macbook pro and OS is completly up to date.
I dont understand how you could mark this as "correct answer" when you didn't give an answer at all, but I'm not suprised.

Hello, I am also having this issue.
I restarted Illustrator, restarted computer, no change. One day it started. I can't think of anything I changed on my system.
See attached screen recorded for example of behavior.
Hardware: Apple M1 Max, 16-inch, 2021
OS: macOS Ventura - Version 13.6 (22G120)
Illustrator: 2024 - 28.1

No, actually CPU preview is fine.
I tested resetting preferences and it also fixed the issue, but I really prefer not to do that.

Looks like it is either an issue with your graphic card or the driver or with the preferences. The preferences can get corrupted and then resetting them is your only option.

I am having this problem today. I've tried resetting the preferences, but that didn't fix the issues. I am using Illustrator V28.2 on a iMac Pro, running Sonoma 14.1.2.

When you are in CPU preview - does it then work?

Yes, in CPU mode the artboard doesn't disappear while moving, but working in this mode is very slow.

This is not the correct answer. I'm having the same problem, so I reset my preferences, but the artboard still disappears when I use the hand tool. I'm using a 16-inch 2021 MacBook Pro with an M1 chip running Sonoma 14.1.2.

Come on Adobe… fix this! All was fine yesterday (Feb 21, 2024) and then all of a sudden today this is happening again. Please for the love of all effected by this… fix it!

And yes, I tried resetting preferences, restarting computer, shutting all apps, shutting all background apps, and still nothing has worked. This is troublesome at best, and totally effects workflow at worst. The only work around is to make a stroked rectangle the same size as the artboard, put it on it's own layer, lock the layer, then just hide the artboard entirely. Just have to remember to turn layer visibilty off of that layer before exporting or printing
