How do you insert page numbers in a multi-page Illustrator file?

As Monika said, use a script. Otherwise, you'll need to type numbers in manually. 

Illustrator does not have pages as such; it has artboards.

Depending on the type of document you are working on, you may want to use InDesign instead of Illustrator. InDesign has auto page numbering and many other features for longer documents.
