There does not appear to be any native full-screen support for Illustrator (2023, version 27.5) running on MacOS (Ventura version 13.3). At most I can "nearly" maximize the application, but the window controls, menu bar, and a thin strip of visible desktop above still remain. Is this by design, or am I missing something?
Sounds like a feature request which you can do here:

Not sure I understand what you are after, but does pressing F on the keyboard a couple of times help?

In most modern MacOS apps, when you click the green window button on the top left, the app will become full screen and the menu bar auto hides. This doesn't happen with Illustrator.

Oh, how I hate that behaviour.
Can you try the F key?

Yep, I tried the F key. The Illustrator window becomes larger, but doesn't become full screen in the sense that it doesn't fill the screen completely and the menu bar does not auto-hide.

I have to pres F twice to get into the "no menu bar" mode

And does View > Presentation Mode help?

The View>Presentation and View>Screen Mode>Full Screen Mode options do not replicate the normal behaviour of the majority of MacOS apps. Adobe seem to have prevented Illustrator from behaving like a normal app in terms of window control, in that you cannot just click the green button and have it fill the screen and auto-hide the menu.

Hate to be the bearer of bad news but it's on ongoing problem with the Adobe ecosystem for well over a decade. https://community.adobe.com/t5/photoshop-ecosystem-ideas/p-support-for-native-full-screen-mode-on-ma...

Set the application dock to autohide. Next, drag the illustrator window from the bottom right corner to the bottom of the screen. It should now effectively be fullscreen.

Unfortunately filling the desktop space isn't the same as native full-screen, see discussion and implications of MacOS application frame here: https://community.adobe.com/t5/photoshop-ecosystem-ideas/p-support-for-native-full-screen-mode-on-ma...

Yes, that's why it's true fullscreen but better than having the dock take x% of space.

Agreed that having the dock and menu bar hidden is better! Still, would like Illustrator and InDesign to eventually recieve an option to use the native MacOS application frame as well.
