You can make your own using Edit > Keyboard Shortcuts... > Menu Commands > Illustrator > Hide Illustrator

On the Mac you can hide any application even if it assigns the Cmd+H shortcut for something else.

Cmd+Tab switches to the next application

Keep the Cmd key pressed further on.

You should see the centered strip of application icons. The targeted application is highlighted there.

Cmd+Shift+Tab to switch to the previous application (e.g. Illustrator).

Still keep the Cmd key pressed.

Cmd+H hides the highlighted application, or shows it if already hidden.

Repeat for other applications.

Thanks for the tips, folks. All I know is, command-H works in every other application, and it ought to work in Illustrator, too. The first suggestion means that I have to spend time to roll my own; the second requires a lot more keystrokes. Adobe should do this, not me!

Cmd H was used in Illustrator (and Photoshop) to Hide Edges long before Apple decided to use this for hiding the application. If you like it to hide the application, it is easy to change.

Exactly. If you change it one way or the other you will always upset one half of the userbase. Illustrator engineers this time thankfully decided not to mess up long time users' muscle memory.
