Please PLEASE PLEASE can anyone share how to create a simple 'releif shaddow' on text ?
Not a drop shaddow, theres a tool for that but an angled shaddow with a gap off the letter like i would paint in my signwriting days. Used Omega composer for years which had a simple tool for it alas not on Adobe

Outline text, color blue, move a copy down and left as required, color white, send to back, select all, copy, delete blue, change white to gold, move and copy offset as required, blend 500 steps, expand, ungroup, select all, add 1pt stroke with round cap and round corner*, pathfinder unite, paste in front.
* not necessary but gives a less staggered outline, more pleasing to the eye imho... if you can even see a half a point step...

The plotter *will* see all the anchor points when cutting this out of foil in order to put on a vehicle as the photo suggests.
