How do I create a single PDF file from several InDesign files?

In InDesign:

Put them into an INDB book file and export from the INDB Panel menu as PDF.

In Acrobat:

File > Make > PDF from several Files

You can otherwise combine several PDF files to as single file using AcrobatPro or Adobe Express.
