I need to create a quote and invoicing template for my company. Should I use Illustrator or InDesign?

If your choices are InDesign and Illustrator, I would use InDesign, but you should use the one you are most comfortable with.

I would save as PDF and use Acrobat to convert to a fillable form, too, I think.

You should use QuickBooks.

Thanks Bob and good point for invoicing  😂

However, the quote needs to include some technical detail and a design. It's a complex product and the volumes are low.
