Hello, I was just about to finish the desugn of my book in beautiful Garamond, when I found out Garamond wasn't sustained anymore, just one day before my deadline. Is this how things work in In Design? Out of the blue, overnight? Without announcement?

It may well be that you have an old, Type 1 font set — and Type 1 font sets were completely deprecated in 2023 after some five years of warnings. All you need is any TTF/OTF font set instead, and Adobe still offers several right in the Adobe font pool.
Simply install whichever one is the closest fit for your taste. You probably want Adobe Garamond but there are others.

If you're using an Adobe Fonts font from your CC subscription, it may or may not be available while offline unless you've specifically downloaded and installed it. (I'm a little hazy on the fine details, as I rarely use CC fonts and never without a net connection!)

Adobe Fonts are supposed to work when you're offline, assuming you've downloaded the font. I believe that is when you've "installed for non-Adobe apps" in the CC app.

I wrote "supposed to work" because I have very clear, very painful memories of being on a direct flight from Portland to Reykjavik, expecting to deliver a rush project for a client immediately after deplaning. I checked the install of CC and the fonts in the PDX airport, and everything was properly installed & activated. Then I got on the plane, and every font I'd installed from Adobe Fonts was unavailable. In-flight wifi, it turned out, was also unavailable. Of course, everything worked just fine as soon as I attached to the airport wifi in Reykjavik.
But yes, Adobe Fonts are meant to work when you're offline. And fonts usually work offline, for me. In the past I've gone through the routine where I log out of Adobe Creative Cloud, delete temp files, purge font caches, restart, and then log in again. Then it works... until it doesn't. I can find the instructions I followed to purge Creative Cloud font caches, if you're interested in trying to resolve this so that you can work on the train without worry.

btw: Adobe Garamond Pro was supplied with older Creative Suite installs, so if you have a system around from that time, you will find them somewhere on your drive: e.g. on a Mac, they were installed into /Library/Application Support/Adobe/Fonts.
