I am working on a book in a single document not using the InDesign book feature. It's divided into chapters with running heads. The book title is on the left on a master page. The chapter title is on the right is a variable. I am using the automated table of contents feature. All works well except for running head chapter titles that are too long. Is there a way to fool the variable with a shorter title, but not fool the table of contents? I know how to fool the table of contents when running heads aren't involved with an extra text box outside the margin, but I can't intuit this three-way situation.
Create a separate style for your running headers. Set its color to [None] (or place into a separate frame and set that to non-printing). Find a suitable place near the actual chapter title to place it.
For titles that fit, copy the entire chapter title; if too long, change this text at will.

The bad thing is that you must not forget to apply it to your headers, but it could do the trick:
