how to check RGB vs CMYK

In InDesign CC 2017, I selected a rectangular color block (a blue) and used the following to check for the type of color being used in an inherited file: Window>Color>Color>Set

I saw that it was RGB and switched it to CMYK.

Questions:

1 - Is that rectangular color block considered a "color build"?

2 - Did that switch the entire document to CMYK or just that rectangular color block?

InDesign doesn't have a document color space, a page can have a mix of RGB, Lab, and CMYK filled objects. You converted the selected object's color fill to CMYK—the conversion values you get depend on the document's assigned profiles, Edit>Assign Profiles... You can do the same for global colors via Swatches>Swatch Options...
