I know this has been discussed before, but I just wanted to mention that I too am having the above issue. I was running 18.5 on Windows 10 and it kept freezing, crashing and wouldn't completely quit until I forced it to quit using Task Manager. I also had a weird bug where I'd go to delete an element, like a box, and I could select it but it would not delete.
Reverting to 18.4 cleared up the issues. This one wasn't ready for release Adobe.

Introduction: I am using indesign for work and despite the reported problem I can work well without problems.
The only trick is that to close indesign I have to use task manager.
but... but...
Just today my windows 11 (Italian) received a cumulative update:
September 12, 2023—KB5030219 (OS Build 22621.2283)
September 12, 2023-KB5031217 Cumulative Update for .NET Framework, version 22H2
The problem seems to be solved.
I will do further tests and report back to you.

I'm also running InDesign 18.5 on a Windows 10 machine, a laptop with 32 GB of RAM and about seven years old. No issue so far with crashing and freezing. Maybe it's your workflow that is causing this? Where are your InDesign documents stored, where are the placed and linked images and graphics stored? On a partition of your machine's hard disk or on an external volume, a cloud drive or are you connected to a server? With LAN, with WLAN or a remote connection like VPN?
FWIW: If you have to use InDesign 2023, you could try to get back to InDesign version 18.3.
That may help.

It's not the workflow. I've been practicing the same workflow for the past 10 years. It's definitely the software.

I'd go back to 18.3, because I've seen some serious bug reports with 18.4's PDF Export.
Well. What can we do about 18.5 and your problems?
At least you could write a bug report with more details, crash reports, hang reports etc.pp. at InDesign UserVoice:
