Page Inspector not showing all spreads so I cannot add button interactivity using Go-To Page. It says I have only 204 pages when in fact I have 234? What could be the issue?

I can see the problem. The thing is that the Go to Page controls in the button do not show the page names, but a position of a page in the document.
Your document has only 204 pages all in all.
It does not start with a page named "1".
Example: Supposed you start your document with page 8, the button's control still will offer 1 as first occassion to go to. The 1 in the control means the first page of the document and not a page with the name of 1.
You can switch the view of page numbers in the Pages panel to "Absolute numbering" to align the numbers you see in the button's controls with the view of page numbering in the Pages panel. The Pages panel will then show the first page in your document as "1" and the last page as "204".

Preferences > General > Page Numbering > View:
and set Page Numbering to Absolute Page Numbering.
From my German InDesign:
Don't forget to switch back Page Numbering > View when done with the button.
