PDF preset color conversion

I created a PDF document using the "minimum file size" preset. I changed the preset so that it doesn't do color conversions.
I opened the PDF with Acrobat Pro and using the output preview (euroscale coated profile) I noticed that the color values are different from those expected. for example the text is not 100% black but 79 72 64 71, a 10% gray screen is 9 6 6 0 and so on.
by selecting inspector instead of separations, the data I detect is correct.
if I open the file with illustrator the values are correct.

 

the same PDF produced with typographical quality Output without any color conversion has the correct values.

 

what I'm missing ?

Can you show a capture of your Export>Output tab? What is your Profile Inclusion Policy set to? If it is Include All Profiles and your Black text does not have EuroScale Coated embedded , the EuroScale Coated Simulation would show a conversion to 4-color. Try All RGB and Tagged Source CMYK Profiles

using the "minimum file size" preset

 

Hi @milko259349307s4y if by "minimum file size" preset you mean the default [Smallest File Size] preset, that preset converts all color to sRGB. The CMYK Simulation for the conversion of sRGB black to EuroScale Coated would always be a 4-color CMYK value. Set the Destination to Document CMYK if you want to export the document’s CMYK colors unchanged.

I would like to point out that, in my rough English, I wrote that I modified the preset so as not to perform the color conversion.
