Print booklet to PostScript, can't get the right size for 17x11 document

I'm trying to get a booklet pdf of a document that is 17x11 (8.5x11 when folded) with a standard .125" bleed. I am reasonably familiar with the process of exporting to PostScript and converting to pdf, though usually I am working with an 11x8.5 (5.5x8.5 when folded). I set the booklet up to print at Tabloid size (11x17) because custom size is greyed out. When I look at the booklet preview, the bleed of the document is off the edge of printable area. Anyone know hope to resolve this? I'll include some screenshot that will hopefully be useful.
