How can I have my copywriter edit the text as I work in InDesign and have it updated in InDesign?

They could have InCopy https://helpx.adobe.com/ie/incopy/using/using-incopy-workflow.html

If they want to use InDesign - you can check out Layout Zones
https://creativepro.com/free-layout-zones-add-on-is-incredible-productivity-tool/

But you can' have an InDesign file open at the same time by 2 different people.

Only 1 person can work on the file at a time.

That's not InCopy, it's note pad. This is not something you're likely to be able to do without some training or at the very least some in-depth reading. Your co-worker will have to get an InCopy subscription which is only $5/month.
