I have created a table in InDesign, setting EXACT row heights.
The text is set to ALIGN CENTER.
When I move the table anywhere on the page, the text spacing changes, and in many cases (but not all) the text "disappears" altogether (as if the cell was not "tall" enough).
Also, the text position is different within the cells.
Why is the text moving within the table cell?

I think that MW is correct. To fix the problem either select all of the text in the table and choose the "Do not align to Baseline Grid" option in the Paragraph Panel or if you've used a Paragraph Style make sure that Align to Grid is set on None. See screen shot:

I would first check if one or more styles are aligning to a baseline grid. That would present itself like you are describing. If so, and you wish to have free floating tables not aligned to a baseline grid, you need to shut it off for those styles used.
