What's going on?

I'm ready to export an entire book and all of the sudden it's not showing me so many fonts!!

Showing where? Do you have any filter checked like Recent (the clock) or Favourites (the star) or Cloud etc? If so, click on the symbol to turn of the filter.

Simply when I open my document, the fonts are missing!
I must print this book already!

Shut down InDesign

Reboot

And try again.
