Maybe the answer is here- Print to PDF

Note: Printing a file to PDF using the Adobe PDF printer flattens the file.

And do you have Adobe Acrobat installed and working?

The issue was Adobe Acrobat - uninstall and install fixed. thanks everyone.

You mean toggling to Print to JPEG?

If you want to print an actual PDF on Mac, you should be able to still do so from the actual Print dialog as this functionality is built into the OS:

I can still print to PDF, but the files are very large.

Previously I could 'Save as Adobe PDF' and it would open a dialog box where I chose where to save the file - this 'Adobe PDF' function would give me the right size PDF and has done so for the last 7-8 years.

    It has not stopped working.

There is no "Save As..." in Lightroom; never has been.  You are confusing Lightroom with another program, perhaps Photoshop.

The  Print module only gives two options- "Printer" or "Print to File" (JPG)

For a PDF you choose Print to "Printer" in the Print Job Panel, and then select a PDF option in the printer dialog that opens. .

In Windows, I need to choose the printer- "Microsoft Print to PDF" (or software that installs a PDF printer).

For Apple printer dialogs- I believe there is always a PDF option available.

Screen-clips of the dialogs you see might be helpful for an answer.
